what did YOU eat last night? (new pics almost every night)

I'm hoping this could be a perpetual thread, with everyone describing what they had for dinner. Then we could mooch ideas off of each other!<BR><BR>I'll start. Last night, I didn't get home till 9, and I wasn't sure if I wanted breakfast or dinner food, so I compromised and made a fritata at the suggestion of #cooking. <BR>View image: http://gallery.jumpyfroggy.com/albums/food/2383_fritata_19jul05.sized.jpg <BR><BR>I cooked up some crumbled hot italian sausage, added some chopped bell pepper, then covered that with some eggs+cream (lightly beaten), then topped with cheddar and feta cheese. I baked it in the oven for about 20 minutes at 325, then broiled it for a few minutes to brown the top.<BR><BR>The night before, this was my dinner (as posted in Draccy's dinner thread):<BR>View image: http://gallery.jumpyfroggy.com/albums/food/2380_baconscallops_18jul05.sized.jpg <BR><BR>Bacon-wrapped scallops in a white-wine cream sauce, served with rice, and baby spinach (which also had some chopped bacon)<BR><BR>And, this weekend, I had steak and potatoes. <BR>View image: http://gallery.jumpyfroggy.com/albums/food/2377_steakntaters_17jul05.sized.jpg <BR><BR>The steak was cooked on the lovely charcoal grill (natural lump charcoal), and the potatoes have blue cheese and bacon.

I had baked salmon with rice last night. Prepared by a highly experience chef. It was yummy. <br><br>(poverty/street cred note: I didn't have anything really to eat previously that whole day. Except maybe 15 pistacio nuts and a bowl of white rice and 2.5 glasses of water. Last night was grilled chicken with Emeril's seasoning (homemade, search the foodtv website). Tonight will be sauteed scallops on top of pasta tossed in olive oil.<BR><BR>Plus the usual helpings of broccoli, corn on the cob, a couple mangos, a papaya, and a muskmellon.<BR><BR>Tomorrow? Well, lets just say that tonight I'm gonna dump a heap o' yummy stuff into a crockpot, leave it in the fridge overnight, and slo-cook myself a huge pot of chili all day. Yum!

<br>I did take an interior shot, but it wasn't that impressive. I should have used more egg mixture, because it was kind of thin. <br><br>It wasn't crappy, it was quite tasty, thank you very much.<br><br>But I really, really don't like cooking, so on the rare night when the GF isn't home for dinner, I usually go for something easy. Plus, all the things I know how to really cook are geared for 2+ people and are hard to reduce portions on. *shrug*
 
1 package - NutriSystem Macaroni & Cheese<br>1/3 cup - Grape Juice<br>1 cup - Tomato Juice<br>1 slice - Whole Wheat Bread<br>2 tsps - Peanut Butter<br>1 piece - NutriSystem Chocolate Macedamia Biscotti<br><br>Combine ingredients in a bowl and let stand for 15 minutes at room temperature. Bake in preheated oven at 350 degrees for 35 minutes. Spread in greased 3" x 18" casserole dish and refrigerate for at least 2 hours.
