So, I'm tired of getting bullied by 2 British blokes on the ArsClan TS about still running a 3770k (Ivy Bridge) and am thinking about picking up the 7800X3D bundle from Microcenter next time I go to NYC.

Uses (mostly gaming):
Gaming - Stellaris, Total War, Skylines, Diablo, Rainbow 6, XCOM
Productivity - Vitis, Vivado, Quartus
Some questions:
1) Is Gigabyte still a good brand? I know their security practices with BIOs updates aren't the best (https://www.pcmag.com/news/hundreds-of-gigabyte-motherboard-models-suffer-from-potential-backdoor) but that seems mitigated?
2) CL36 good enough or should I try to get CL30 RAM?
3) Any gotchas with using "unsupported RAM"?
I don't see 6000J3636F16GX2-FX5 listed in the Memory Support List on Gigabyte's page and most types of 6000J3636F16GX2 listed don't support EXPO. However, G.Skill's webpage does list the FX5 as having EXPO support. Very possible that Gigabyte just stopped testing/updating.
4) What's a safe max voltage for DDR5 if I decide to try to get something faster?
Was going to wait for more news on Intel 15th gen, but for $500, this bundle seems like great value + great immediate upgrade. Thanks!

GPU : Radeon Vega 56
PSU : Seasonic PX-850 (~1 year old replacement for previously dead PSU)
HSF : Deepcool LS320 with 2 Gentle Typhoons (~1 month old replacement when I realized my H80 was about 12 years old) - supports AM5 mounting
