Since this thread has been brought back from the dead anyway, I'll give a vote to a recent tool I found for Youtube download (video, audio, whatever): https://stacher.io/

Stacher is a front for the command line application YT-DLP (which can actually download from a ton of different site) and does a great job. Totally free.
Here is the info on YT-DLP: https://github.com/yt-dlp/yt-dlp/blob/master/supportedsites.md

My personal pipeline of video to audio currently consists of metube ( https://github.com/alexta69/metube ), ran as a container on my TrueNAS.

Then grab it, and convert it through VLC player, as mentioned before.

If there's obnoxious outro music or something I want to cut, I'd throw it at shotcut ( https://www.shotcut.org/ ) to trim it. I'm not sure if shotcut can directly output to .mp3 without some pain, but it does have .mp3 as an output container, so it should be able to.
