VLC player has a Convert/Save option that will let you convert the audio track of videos to mp3's etc.

jdownloader works great for this. Just copy the link, and on the link grabber tab, it shows the different audio/video segments of the link, and you can just opt to download the audio portion. That way you don't even have to download the video first and then convert it. It does it all in one step.
You could do what my dad does and turn his speakers up really loudly and wave a pocket recorder around in the air.

Stacher is a front for the command line application YT-DLP (which can actually download from a ton of different site) and does a great job. Totally free.

My personal pipeline of video to audio currently consists of metube ( https://github.com/alexta69/metube ), ran as a container on my TrueNAS.
Then grab it, and convert it through VLC player, as mentioned before.
If there's obnoxious outro music or something I want to cut, I'd throw it at shotcut ( https://www.shotcut.org/ ) to trim it. I'm not sure if shotcut can directly output to .mp3 without some pain, but it does have .mp3 as an output container, so it should be able to.
